Is it possible to make a grilled cheese that’s not only dairy free, but completely vegan and gluten free?!
Would someone even want to eat it if that were the case?? I mean, no cheese is one thing, but no butter!
Last week I embarked on my own little cooking voyage to recreate a childhood classic.
I wanted my veggies.
I wanted my oozing cheese.
I wanted it sliced diagonally down the middle. {how did your mom cut the cheese? <<yup it’s still funny}
While I am not 100% Vegan, I have found the Vegan community is the best resource for veggie packed recipes that by default will not contain any form of dairy. So I started investigating and eventually got to work.
Vegan Veggie Delight Grilled Cheese Recipe
This is a super versatile recipe for anyone trying to make a healthier grilled cheese or dairy free one!
Using mushrooms makes it an easy transition from other grilled sandwiches for many picky eaters…yes I’m always trying to find ways to sneak in extra veggies for myself too!
Ingredients
- Gluten free bread or I used Ezekial Sprouted Grain
- Daiya cheddar cheese slices (1 per sandwich)
- Cooked veggies — I used sliced zucchini and mushrooms
- Avocado
- Nasoya Nayonaise (or vegan butter)
Directions
- Toss your veggies in to medium high heat non-stick pan to sauté
- While those are cooking, lightly spread Nayonaise on one side of each bread slice
- Place slice of cheese on one side, layer on veggies, then spread avocado on the opposite side and press together {um yes making a sandwich}
- Place in the low-medium heat pan and flip after 2-5 minutes
NOTES:
If using a panni maker you could skip the nayonaise. Again I’m a minimalist kitchen gadget person, so I needed an alternative to dairy.
Any veggies will do, I like to cook up a big batch for meals all week and then utilize what’s available. This time was sliced zucchini and mushrooms.
