Taco Noodle Casserole
Original version called for egg noodles and beef, but I figured why not go healthier if I could!

Ingredients

ground turkey

can Rotel diced tomatoes with green chilies
1
can enchilada sauce
found Old El Paso is gluten free
1 1/4
cup
water
2
cups
diced bell peppers
1
cup
spinach
2
cups
black bean noodles
Optional: Mexican cheese
I used on half for David
Instructions
Pre-heat oven to 400 degrees
Spray baking dish
Place uncooked noodles in dish
Cook turkey until no longer pink in skillet on medium high (5-7 minutes)
Add water, Rotel, enchilada sauce and veggies to skillet
Once it starts to boil, pour over noodles
Cover with foil and bake 15 minutes
Stir and if adding cheese, sprinkle it on
Bake additional 10 minutes without foil
