Chicken Quinoa Soup

My version of chicken quinoa soup. With lots of veggies!

Ingredients

  • 1 tbsp Vega Antioxidant Oil blend
  • 4 cups Pacific Low Sodium Chicken Broth
  • 1/2 lb thin, cubed chicken breast
  • 2 cups sliced mushrooms
  • 1 yellow onion diced
  • 1/2 green pepper diced
  • 3 celery stalks diced
  • 1/2 bag shredded carrots
  • 3/4 cup dry quinoa
  • 1 cup water
  • 2 tbsp minced garlic
  • salt
  • pepper
  • oregano

Instructions

  • In a large pot sauté onion for 6 minutes
  • Add pepper, celery, carrots mushrooms, garlic and cook 5 minutes on medium heat
  • Add broth, water and quinoa
  • Bring to a boil
  • Reduce heat to low and allow to simmer 15-20 minutes
