Asian Style Quinoa Salad

During the FitSocial trip, we made a stop at the Anschutz Health and Wellness Center where we got to workout and then eat!!! But of course this was a special meal prepared by a chef who talked us through the process and why he had chosen certain ingredients.
DSC00865For my part the HUGE pile of veggies included in this dish got me immediately excited, but after that I was pretty stoked to learn some knife skills. Chef went through a few different tips on how to keep all your fingers and get it done a little faster. One of the best things he shared was how to PERFECTLY cook quinoa and other grains.
Asian Quinoa Salad VeggiesAsian Quinoa Salad — For my part, I would cut the total amount of quinoa down so that it was more of a veggie salad with some quinoa. I would also buy pre-shredded veggies…just my two cents for making this easier!! But I have provided the recipe as it was originally put together by the Wellness Center since they are the pros.Quinoa Salad Ingredients
