Kale and I have had an on again, off again relationship…in smoothies good to go, in salads not so much, in soup awesome, as chips no thanks. However, after finding success with brussel sprouts I wanted to give kale another chance for it’s many healthy benefits!
Luckily as I was making my new favorite meal, Jason from CookTrainEatRace put out the newest #EnduranceFoodies Carnival challenge of creating a great meal with just 2 colors…while the goal of most meals is LOTS of color because that means lots of veggies, I am excited to say this power packed meal needs only two.
- 4 cups kale, stems removed
- 1/2 white grapefruit in slices
- 2-3 oz chicken or tempeh
- 1 tbsp EVOO
- juice of 1/2 lemon
- 1 tbsp soy sauce or Braggs aminos
- 1 tbsp maple syrup
- Rip kale into pieces
- Add last 4 ingredients to bowl, mix
- Add kale to bowl and massage by hand. Put in the time to really massage your kale for best flavor
- Let kale sit for up to an hour in fridge for flavor to settle even further
- Add all ingredients and enjoy
Tip: I tried the recipe sans lemon and it was ok because of the grapefruit juice, but it’s much better with it! You can also use pink grapefruit, but white has a really crisp taste which is great with the kale.
