I’ve long said “I cook. I don’t bake.” This is because I know when I whip up a tasty treat I find myself going back for seconds, thirds and fourths all on the first day! However, when the mood strikes for something sweet I am quickly dipping in to the less than healthy processed foods containing dairy and eggs that David has around the house.
Sure in an ideal world my cabinets wouldn’t have any of these things. But he is muscular and healthy and still wants those treats AND I don’t believe being healthy means forgoing dessert for life! I enjoy chocolate daily thank you.
Now it’s time to make a change. Just like I took control of feeling better by cooking, it’s time to do so with baking. There are tons of great recipes out there and I’ve always found ways to sneak in veggies…so now I’ll find ways to make things that are dairy and egg free….step two will be freezing them or something along those lines so I don’t over indulge.
EGG FREE YELLOW CAKE
Super Bowl Sunday we were in charge of dessert…I really wanted to take something I could eat! We happened to have a box cake (here are some gluten free options) that has been stuffed in the back of the cupboards so I figured why not. There are mixes out there that are both dairy and gluten free which is what I would have preferred…but I didn’t want to scare everyone with my first creation, so we call this a middle road. Are you ready for this…you can skip the eggs and the oil by making the cake mix with simply…a can of lemon-lime soda. I know right?! Who knew I would ever say anything about soda on this site! While other options such as applesauce and flax eggs are out there, they don’t seem to allow the cake to rise and get fluffy.
The cake tasted great right out of the oven…and the batter was killer. But after sitting out uncovered for the evening the cake definitely got hard and more spongy. It’s unlikely I will make this again, but as noted very proud of myself for not just picking up dessert, but taking the time to start thinking through how to bake.
Now the icing is a great clean eating option and I will be using it again! I learned this time around to slowly adjust the honey, coco ratio to keep it from getting too chocolatey.Icing Ingredients
- 1/2 cup cacao powder (or use all cocoa)
- 1/2 cup cocoa powder
- 4 tbsp honey
- 1/2 tsp vanilla extract
- 2 tbsp coconut oil
- 2-4 tbsp water
Blend all ingredients together starting with 2 tbsp water and increase water as needed to reach desired consistency.
