Get excited, you are about to have a whole new vocabulary when it comes to your food…quiona, spelt, flax, tofu scramble, nutritional yeast, lentils…and just think of the BEAUTIFUL plates of color that you will be eating.
This challenge is NOT about being perfect. Do not drive yourself crazy thinking about every tiny ingredient, but do focus on creating meals using mostly whole foods that are planted based. It has been scientifically proven time after time that a diet plentiful in plants provides optimum healthy and all the nutrition you need to be a great athlete.

Keep it simple…then keep planning. Make sure you set yourself up for success! If you haven’t started meal planning then today focus on meals that feel safe and comfortable like the following:
Breakfast: Steel cut oats with berries and walnuts – add some ground flax for Omega 3’s and fiber
Lunch: Big salad with beans or chickpeas for protein – go to a salad bar if necessary to get yourself thinking of all the foods you can include in a salad without meat or cheese. Stick to oilve oil or vinegars for dressing.
Dinner: Vegetable soup, whole grain bread with hummus and avocado
Snacks: Green smoothie, apple, carrots and nut butter
