Coconut Oil

During the summer, I did really well at including avocados in a number of meals…but then I just stopped. Since that time something has felt lacking in my diet, but I couldn’t pin point it. Recently, I realized that I was missing GOOD FATS. Eating nuts daily certainly helps, but is not enough I am now working to add in salmon, avocados and my newest find coconut oil! It’s nothing new, but I didn’t know much about it so I have been learning more and am now using it.

Coconut oil, according to Dr. Perricone, will make my skin look great and blast off some body fat (one of the few useful tid bits in his book, but more about that tomorrow). All right I’m sold on blasting off fat, but here are a few more benefits!!

coconut Improves digestion and absorption of fat-soluble vitamins and amino acids.

coconutSupports the immune system, thyroid and nervous system.

coconutNaturally fights off viruses, bacteria, and fungal overgrowth.

coconutImproves the absorption of calcium and magnesium.

coconutHelps the body use the essential fatty acids (omega-3, omega-6, omega-9) more efficiently.

HOW TO USE COCONUT OIL
For starters you can actually put it on your skin as lotion, but if you want to put it in your food…then maybe like me you need some ideas!!apples

One of the first that I tried was putting some coconut oil on an diced apple with cinnamon and doing a quick microwave session… now purists would say NO to the microwave, but hey I’m making baby steps here.

Not surprisingly my next adventure…adding it to a green smoothie!!! This is great because it means the meal is 100% raw allowing everything to be quickly absorbed and the fats creating a more long lasting smoothie.

Coconut oil can also be used in place of olive oil in stir fries or in soups and stews to thicken them up! Here is a page with tons of great coconut oil recipes.

I love coconut oil. I keep a jar in the shower and use it a couple of times a week as moisturizer for my skin and hair. I also keep a jar in the kitchen for cooking and in smoothies.

I love using coconut oil. :) I only use coconut oil & olive oil now (coconut oil for higher flashpoint).

This is probably a stupid question, but does coconut oil taste like coconuts? If so, it might be good with Thai curries that use coconut milk!

I don't think we have coconut oil in the house (I may be wrong) but my hubs the Caveman is a huge fan of coconut butter. many of the same benefits.

I didn't know all that about coconut oil. I had heard that it stores for a very long time though where other oil is only good for about 2 years. Thanks, I've been putting off buying it because of the cost, but maybe it's worth it after all.

I love coconut everything! I discovered coconut oil last year and was using it in smoothies but I think I was using too much too often and gained a bit of weight and then I stopped using it and haven't started using it since. Not sure why, it is pretty darn delicious! Now that you have reminded me, I might go and buy a jar soon.
