After a fantastic massage, my legs are great but my back is still a mess from my neck to my lower back. I got super lucky and was able to get in a chiropractor over lunch....let's pray this is the last doc for awhile!! I gotta get this spine figured out cause it's giving me migraines with the pain at the base of my neck.
COOKING AROUND THE WORLD
Inspired by all of your blogs this week... it was time to cook up some Mexican and Chinese. First up black bean enchiladas! D wanted chicken in his, well lucky dog that he is I cooked up some chicken for stiry fry. I used these fantastic whole wheat tortillas that are only 50 cals, but lots of fiber! Stir fry was super easy with baked chicken, a bag of mixed frozen veggies and Kinkoman Stir Fry sauce.
I wasn't super duper creative with the cooking, but we have some good eats for this week! I also picked up a spaghetti squash and some mushrooms for a meal later. I have managed to stay around 1800 calories the past couple days, so I guess my appetite did indeed drop.----------------------------
MORNING TO GO
I started today with a new mix to my Green Smoothie and this one was electric green, finally! 2 cups spinach, handful romaine, 1 cup cucumbers, 1 cup frozen mixed fruit (pineapple and cantalope mostly) 2 tbsp Coconut Mix from Matilida's Kitchen. I mixed it up and brought it along to work, boy I love starting my morning this way it keeps me from snacking on other things!

Hehehe to "I may love her more than my husband." If only they (husbands) knew how important those magic words are to the health of a relationship. ;) Are you sure you're not losing weight? Seems she would definitely notice, and sometimes that happens to me when I can't run (oddly enough)-- esp. since your calories have dropped.
Aren't "You've lost weight" comments the best? hehehe The enchiladas might not be "super duper creative" but they look FAB!

I am still trying to wrap my mind around the smoothies with romaine and spinach. I know it is healthy, but just doesn't sound that appetizing. I should give it a try as I know you've loved them. The enchiladas, on the other hand, look awesome!

I think I'm the one who needs to be asking you for smoothie recipes :) Lately I have been staying with the boring basic spinach/banana/water concoction...I've tried adding strawberries/romaine/almond milk, but nothing that I like really. I'll have to try your recipe - keep 'em coming! I have added some mint to my spinach/banana smoothies and that tastes pretty good. I need to experiment a little more!
I'm going to have to look for those low-cal tortillas. We wouldn't eat if we didn't have tortillas!

Congrats! It isn't surprising that you've slimmed down (although you always looked fabulous). You PT hard and eat well.

omg my neck and shoulders are SO SORE from my massage yesterday... he totally beat me up :) i didnt realize how many knots i had in my neck - yikes!
Yeah, that is definitely the way to make customers feel better about themselves. Every massage therapist should say that!
